RED CANYON RANCH BUFFALO CRANBERRY ROAST
    Marinate a 4-5 lb. buffalo shoulder roast overnight in:
  • 1 cup cranberry juice
  • 2 tablespoons olive oil
  • 1 tablespoon minced onion
  • 3 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1 crumbled bay leaf
  • 1 teaspoon salt
  • Pepper to taste
Pour one cup cater into roaster pan, place roast on rack, and bake at 275 degrees for 3-4 hours, or until tender enough to flake with a fork.
Use remaining marinade to baste roast about every hour throughout the baking process.
